Happy News Monday - Low Carb Diets

Low Carb Diets my not be so bad.
I'm not a fan of one kind of diet. I think everything in moderation is key. But, I have cut back on my carbs and feel a lot better. I have more energy.
I didn't cut carbs out of my diet completely. I eat a lot of veggies. Love veggies. I'm always looking for good veggy recipes.
I tried Weight Watchers for about 3 months. I was starving for 3 month. It just wasn't my thing. I'd rather workout than diet.
Not that my diet is so bad. I'm not a big sweet eater. I just don't crave those things.
On the other hand, I like wine with dinner.
And, like I said, I eat a lot of vegetables.
So anyone have any good recipes for vegetables? Especially squashes?

Personally, I'm a sugar addict, but I also like veggies. This is an easy recipe, so even I can make it.

Mix a pile of cut up vegetables (butternut squash, carrots, onion, garlic, red pepper and mushrooms is my fav mix), add balsamic vinegar, olive oil, salt and pepper to taste. Roast at 400 degrees until onions have carmelized. That's it.

I roast a big batch and use the veggies over pasta, in whole wheat wraps, mixed with beans and brown rice. Endless possibilities for a whole week of meals. :)

Yeah that's a super mix from Melinda. I like those small potatoes, chunked up onions, mushrooms, carrots and red pepper. Also try the spaghetti squash in the micro then top with a teeny tiny bit of butter, salt and pepper. Or top with tomato sauce. Yum. I'm following you on Twitter. :)
